P 3 and P 4 Recipe

Faux fried rice

1/2 head of raw cauliflower, grated (had about 3.5 cups of grated, loosely packed cauliflower)

3 green onions, chopped

4 cloves garlic, minced

2 - 3 Tbsp. of soy sauce (note, I use Raw Coconut Aminos instead since I don't do soy)

1/2 to 1 tsp. of garlic salt

3 eggs, beaten

Oil (I use coconut oil & a touch of sesame oil, but if you're really into fats, bacon grease is FAB)

Pork, chicken, or shrimp, cooked (optional)

Any type of low starch green veggie (i.e. not peas - they are high carb). I usually add celery or broccoli.

In a wok or large pan, heat enough oil to cover bottom of pan. Fry minced garlic and white part of onions for approx. 1 min. Add grated cauliflower and fry for approximately 5 min, stirring constantly. Add soy sauce, garlic salt, green onion tops, and meat (optional) and stir until mixed. Push mixture to side of pan. Add more oil if necessary, and scramble eggs in empty side of pan until done but still moist. Stir eggs into "rice" and remove from heat. Serves 3 as a side dish.

Note: I didn't measure anything. These measurements are just estimates.

Note: The secret is to use raw cauliflower.

You can either grate in a food processor, or use one of those hand choppers and just chop it to rice sized pieces.

Also you can freeze chopped/grated cauliflower to make it faster the next time. I usually process 2 heads at once.
