Healthy Mayo

MAYO

1 egg
3/8 teaspoon salt
1/2 teaspoon mustard
2 teaspoons white vinegar
1 teaspoon lemon juice
1 teaspoons Stevia
1/2 cup oil

Break the egg into a pint wide-mouth mason jar. Add everything but the oil. Pour the oil on top, but don't stir. Immerse a stick blender to the bottom of the jar. Hold on the bottom and blend 5-6 seconds until the bottom starts to look creamy and whitish. Move the blender up and down slowly until emulsified.

I used my Magic Bullet for this.

Makes about 3/4 cup
Do not freeze

Great Ranch Dressing

RANCH-STYLE SALAD DRESSING
1/4 cup mayonnaise (look for the recipe here)
1 tablespoon sour cream
2 tablespoons heavy cream
1 teaspoon white vinegar
2 drops Tabasco
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon celery salt
1/4 teaspoon pepper
1/8 teaspoon dill
Mix all of the ingredients and chill well before serving.

Per Tablespoon: 76 Calories; 8g Fat; trace Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carb
Per 2 Tablespoons: 178 Calories; 19g Fat; 1g Protein; 2g Carbohydrate; trace Dietary Fiber; 1.5g Net Carbs

Thanksgiving P3 recipes

Here are some recipes for Thanksgiving that you may enjoy for those on P3 and P4.

Pumpkin Pie

1 can pumpkin (be sure it's 100% pumpkin and not pie mix)
2 eggs
1 can evaporated milk
1 c sweetener (stevia)
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
unbaked pie crust

Preheat oven to 425 degrees.
Combine all ingredients and pour into crust. Bake 15 minutes. Reduce heat to 350 and bake 45 minutes. Cool completely before serving.

You can make this pie completely crustless, by pouring into a PAM-sprayed pie dish and following the same cooking instructions.

Pie Crust

6oz pecan pieces
2 oz walnut pieces
2-4 TB butter
2TB Stevia

In food processor, combine all ingredients and pulse until reaches desired consistency. Press down into 9" pie dish.

Traditional Holiday Green Bean Casserole

1 lb fresh or frozen cut green beans
1 egg, beaten
1 cup sour cream
1/2 cup chopped onions
2 cloves of garlic, crushed and minced
8 ozs mushrooms, sliced
1/2 tsp garlic powder
1/4 tsp paprika
Pinch of mustard powder
Fried Pork Rinds

Mix green beans, sour cream, egg, onion, mushrooms and spices. Pour into a baking dish and top with crushed Fried Pork Rinds. Bake at 350 degrees for 40 minutes.

MOCK MASHED POTATOES
16 ounces frozen cauliflower
1 tablespoon butter
2 ounces cream cheese, softened

Oil a pie plate and put in the cauliflower in a single layer. Bake at 350ยบ until dry, about 30-45 minutes. It's ok if it browns a little. Remove from the oven and add the butter. Cool slightly, then pulse in a food processor. Add the cream cheese and pulse until smooth.

Finished Round 2 P2

Today is the day I start my 500 cal with no drops for 3 days and then on to P3. I wish I could go a couple more days on P2 as I am so very close to "ONEderland", yet if I did I would not be loading again on Christmas eve and Christmas, and this I want to do.
I was stuck for days days at a certain weight and I swore that I would never do an apple day as your body will work out the stalls. Will it was getting down to ending phase 2 and my body was not moving so I decided to do an apple day Sunday. I ate 5 apples through out the day. Nothing else. No water, nothing to drink. When I weighed the next morning I lost 1.8 lbs. Broke the stall.
Today I got up and again so close to my goal yet I HAVE to move on.
So, here is my finishing stats for Round 2:

R2 P2 D48

Man, I have been on a stale for a couple of days. Today was a no release, yet no gain day. I wouldn't mind it too much yet I really want to reach my goal by Tuesday. I was looking at the packets of stevia I have, in which I use them at least once if not twice a day and just found out they have sugar in them. Tell me, who would put sugar in stevia??? No wonder there is not bitter aftertaste like they advertise. I have been using this for part of Round 1 and almost all of Round 2. Can we say...slow weight loss? Who knows what I would of been doing if I did not have that. Well, I will not use it again and we shall see if it makes a difference in my weight. Tomorrow is also Saturday and do you know what that means??? WEIGHT LOSS DAY which equals to SLEEP IN DAY! Can't wait. I am getting ready also to try on a smaller size of jeans. It would be wonderful if they fit right now yet I am not holding my breath as at my weight right now, I have never fit into this new size.
So, there you go. What has been happening to me and how I am getting nervous about p3 as last round I had such a hard time stabilizing.
Well, Happy Releases to everyone today. This is well worth it and the best thing I have ever done for my weight problem.

Close to the end

Talk about a trial. I want so bad to be in "ONEderland" by the end of this round, which gets over Tuesday and then I start my 3 days on the 500 cal without HCG. I am thinking it is NOT going to happen. Yesterday I was able to sleep in late and lost 1.4lbs yet today I gained .8ozs. I am at 204.4 today and am holding. I guess if I make it, HURRAY but if I don't then I will make it NEXT round. The whole aspect of this, is I'm feeling better, healthier and happier. This is a life long journey and if I look at it any other way then I will fail again. For the rest of my life I will be on the scale watching my weight, watching what goes into my mouth and why. We need to just keep plugging away and eating right. Sure there are days when I gain (like today) yet I will look at what I am doing...drinking enough water, getting enough sleep, etc. Correct my mistakes and keep moving forward. Since Halloween was this week-end, it really surprised me on how lots of people were tempted by candy. I have NO temptation at all. I still have candy in my house, yet do I want to eat it? Is it worth all my hard work? NO WAY!!! Candy is NOT worth it. This is one reason I love HCG, because I have no cravings and I am in no way tempted to eat the "Junk" food. Keep plugging along everyone. It is well worth it.
